Nourishing Date Brownies for Pregnancy and Postpartum

 

Welcome to this special recipe for Date Brownies, specifically designed to support your digestion during and after pregnancy, help prepare your body for birth, and increase breastmilk supply postpartum. These brownies are not only delicious but also packed with nutrients that are beneficial for both you and your little one. According to the NIH (and so many seasoned mommas), dates during pregnancy help to tone your uterus in preparation for labor, speeding up the delivery process and lowering risk of postpartum hemorrhage. They’re also packed full of energy and nutrients, which your body will need whether you’ve had baby or are still pregnant. Let's get started!

Ingredients:
- 1 cup flour
- 1 cup dates, pitted
- (3 T ground flax seed + 9 T water) OR (3 eggs)
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 t vanilla
- 1/2 cup cocoa powder
- 1/2 t cinnamon
- 1/2 t baking soda

 

- 1/4 t sea salt
- Optional: chopped walnuts or chocolate chips for topping

Instructions:
1. Preheat your oven to 350°F (175°C) and grease a square baking dish.
2. In a food processor, add dates, flax & water and let sit for 5 minutes to soften them. Blend.
3. In a large bowl, mix dry ingredients
4. In a large bowl, mix date mixture, honey, oil, and vanilla
5. Add dry ingredients to wet, mix until combined
6. Spread mixture evenly in 8”x8” pan, option to add chocolate chips and walnuts on top
7. Bake in the preheated oven for 25 mins, or until a toothpick inserted into the center comes out clean.
